Preheat the oven to 350°F (175°C) and grease an 8x4-inch loaf pan with coconut oil or line with parchment paper.
In a large mixing bowl, combine the mashed bananas, eggs, melted coconut oil, honey, and vanilla extract, whisking until well incorporated.
Add the sifted coconut flour, baking soda, salt, and cinnamon to the wet ingredients and whisk until no lumps remain.
Allow the batter to sit for 5 minutes to let the coconut flour absorb the liquid and thicken.
Fold in the dark chocolate chips using a rubber spatula.
Pour the batter into the prepared loaf pan and smooth the top with the spatula.
Bake for 45 to 55 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Remove from the oven and allow the bread to cool in the pan for at least 20 minutes to set before transferring to a wire rack.
