Garlic Parmesan Crockpot Chicken and Potatoes

Ingredients
  

  • 1.5 lbs boneless skinless chicken breasts, cut into 1-inch chunks
  • 1.5 lbs red potatoes, cut into 1-inch cubes
  • 1/3 cup olive oil
  • 4 cloves garlic , minced
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprik a
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Method
 

  1. Grease the interior of a 6-quart slow cooker with non-stick spray or a small amount of olive oil.
  2. Place the cubed potatoes and chicken chunks into the slow cooker.
  3. In a small mixing bowl, whisk together the olive oil, minced garlic, parmesan cheese, Italian seasoning, onion powder, paprika, salt, and pepper until combined.
  4. Pour the oil and spice mixture over the chicken and potatoes.
  5. Toss the ingredients within the slow cooker until everything is evenly coated in the seasoning.
  6. Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours, until the potatoes are fork-tender and the chicken has reached an internal temperature of 165°F (74°C).
  7. Garnish with chopped fresh parsley and additional grated parmesan cheese before serving.
