Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours, until the potatoes are fork-tender and the chicken has reached an internal temperature of 165°F (74°C).
Garnish with chopped fresh parsley and additional grated parmesan cheese before serving.
