High Protein French Onion Gnocchi

Ingredients
  

  • 16 oz high -protein gnocchi
  • 3 large yellow onions, thinly sliced
  • 2 tbsp olive oil
  • 1/2 cup beef bone broth
  • 1 cup low -fat cottage cheese, blended smooth
  • 1/2 cup shredded Gruyère cheese
  • 2 cloves garlic , minced
  • 1 tsp fresh thyme leaves
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper

Method
 

  1. In a large skillet, heat olive oil over medium-low heat and add sliced onions. Cook for 30-35 minutes, stirring occasionally, until deeply caramelized.
  2. While onions cook, prepare the high-protein gnocchi according to package instructions; drain and set aside.
  3. In a blender, process cottage cheese until completely smooth.
  4. Add minced garlic and thyme to the caramelized onions and sauté for 1 minute.
  5. Deglaze the skillet with beef bone broth, scraping the bottom to release browned bits.
  6. Stir in the blended cottage cheese, salt, and pepper until a creamy sauce forms.
  7. Fold the cooked gnocchi into the sauce until evenly coated.
  8. Transfer to an oven-safe dish, top with shredded Gruyère, and broil for 2-3 minutes until cheese is melted and bubbly.
